Vegan Navratan Korma Recipe (Recipe In Hindi)

Vegan Navran Korma is made with vegetables, fruits, dry fruits and nuts. Walnut paste and curd are used in this vegetable. You can make this vegetable when you have guests at home.  Carrots, green beans, cabbage, potatoes, tofu, onions, green chillies, ginger garlic paste, turmeric powder, red chilli powder, cardamom powder, black cardamom, cloves, ginger, coconut curd, coconut milk, mint, saffron, Silver Work, Pineapple, Raisins, Cashews, Almonds, Pistachios, Garam Masala Powder, Coconut Oil, Khus Khus, Cashews, Almonds   2 carrots, cut into small pieces 10 green beans, cut 1/2 cup cabbage, cut 2 potatoes, boiled and cut 1/2 cup tofu, cut 2 onions, cut 6 green chillies 2 tablespoons ginger garlic paste 1 /2 tsp turmeric powder 1/2 tsp red chilli powder 1/4 tsp cardamom powder 1 big cardamom 3 long 1 inch ginger 1 cup coconut curd 1/2 cup coconut milk, thick mint, as per usage 8 saffron silver Work of, optional Pineapple, chopped 2 tablespoons raisins 6-8 cashews, toasted 1 tablespoon almonds, thinly chopped 1 tablespoon pistachios, thinly chopped 1/2 garam masala powder Coconut oil, as per use For paste 1-1/2 tablespoon khus khus 10 cashews 15 almonds     60   30     To make Vegan Navratan Korma, first soak cashew nuts and almonds in water for 30 minutes. Put it in a mixer grinder along with Khus Khus and make a paste. Keep it separately. Cook all the vegetables until soft and keep them aside. Heat oil in a pan. Add cloves, cinnamon, cardamom and black cardamom. After 15 seconds add onion, ginger and garlic. Cook for 2 minutes and add green chillies. Cook the onion until it becomes soft and keep it aside to cool. After it cools down, put it in the mixer grinder and make a paste. Put this paste again in the pan. Add red chilli powder, turmeric powder and salt in it. Let it cook for 3 to 4 minutes. After 4 minutes, add coconut curd, coconut milk and paste of almonds, cashews and khus khus. Mix and let it cook for 5 minutes. After 5 minutes add vegetables, tofu and 1 cup water. Mix and let it cook for 5 minutes. After 5 minutes add garam masala and mix. Now heat coconut oil in a small pan. Add cashews, raisins, almonds and pistachios to it. After 15 seconds add it to the gravy. Take out the vegetable in a bowl and cover it with silver plate. Add pineapple, saffron and mint and serve. Serve Vegan Navran Korma with Garlic Dal, Kachumber Salad and Phulka for lunch.
