The following bhaji is Ambat Konkan curry in which spinach is used. Malabar spinach is used in it, which further enhances the taste of this dal. It is easy to make, so you can make it for your daily meal also. Roasted coconut masala is also added to it.  पालक, अरहर दाल, प्याज, टमाटर, इमली, हल्दी पाउडर, गुड़, नमक, नारियल, धनिये के बीज, सुखी लाल मिर्च, राइ, लहसुन, तेल   2 cups spinach, malabar, chopped 1/2 cup arhar dal 1 onion, finely chopped 1 tomato, chopped 30 grams tamarind, mix it in water and extract juice 1 teaspoon turmeric powder 1 teaspoon jaggery, make powder Salt, 1/2 cup coconut, grind as per taste 1 tablespoon coriander seeds, roast 4-5 dry red chillies for tempering 1 teaspoon mustard 4 cloves garlic, grate Oil as per use     10   45     To make Wali Bhaji Ambat, first put coriander seeds, dry red chillies and coconut in a pan. Cook for 20 seconds and turn off the gas. After the mixture cools down, put it in a mixer grinder and grind it. Wash and chop the spinach. Heat some oil in a pressure cooker. Add onion in it and cook for 1 minute. After 1 minute, add tamarind water, arhar dal, spinach, tomatoes, mix and cook for 3 whistles. Let the pressure release on its own. Mix the dal well. If you want to add some more water, add it and mix well. Put the ground mixture and dal mixture in a pan. After it starts boiling, add jaggery to it and mix. Let it cook for 3 to 4 more minutes. Heat oil in a tadka pan. Add mustard seeds, garlic and let it cook for 1 minute. Add this mixture to the dal and mix. Serve Wali Bhaji Ambat with Vengana Kaap and rice for lunch.
