South Indian Style Vegetable Kurma Recipe – Vegetable Kurma (Recipe In Hindi)

South Indian Style Vegetable Kurma is a delicious recipe that uses lots of vegetables. Cashew and coconut paste is used in it which further enhances its taste. You can also prepare this for your daily meal.  Vegetables, onion, tomato, green chilli, red chilli powder, coriander powder, turmeric powder, black pepper powder, salt, cinnamon, cardamom, clove, ginger garlic paste, coconut, poppy seeds, cashew nuts, oil, salt, coriander   2 cups vegetables, carrots, beans, green peas, potatoes and cabbage 2 onions 2 tomatoes, puree 2 green chillies 1 tablespoon red chilli powder 1-1/2 tablespoon coriander powder 1 teaspoon turmeric powder 1 teaspoon black pepper Powdered salt, as per taste 2 inches cinnamon 3 cardamoms 4 cloves 1 tablespoon ginger garlic paste 4 tablespoons coconut, grated 2 tablespoons poppy seeds 15 cashew nuts 2 tablespoons oil Salt, as per taste Green coriander, a little (for garnish) )     15   45     To make South Indian Style Vegetable Kurma, first wash and cut all the vegetables. Now put them in a pressure cooker with water and salt and cook for 2 whistles. Keep it under cold water so that the water drains out. Keep it aside. Now add onion and tomato in a mixer grinder and make a paste. Soak cashews in water for 30 minutes. After that put it in a mixer along with poppy seeds and some water and grind it. Make coconut paste and keep it aside. Now heat oil in a pan. Add cinnamon, cardamom and cloves in it. After 15 seconds add onion and green chillies. Cook until onion becomes soft. Now add ginger garlic paste to it and cook for 1 minute. Now add tomato puree to it and let it cook for 3 minutes. Now add all the spices in it and mix. Now add vegetables, salt and water and let it cook for 5 minutes. Add coconut khus khus paste in it, mix and turn off the gas. Serve. Serve South Indian Style Vegetable Kurma with Beetroot Pachadi and Lachha Paratha for dinner.
