Saunf Wale Aloo Baingan (Recipe In Hindi)

Aloo Baingan with Fennel is a delicious recipe which also uses fennel powder. This is an easy recipe using potatoes and brinjal which you can prepare for your daily meal. It is easy to make and is full of taste.  Brinjal, potato, onion, cumin, ginger garlic paste, red chilli powder, turmeric powder, oil, coriander leaves, salt, coriander seeds, fennel.   1 cup brinjal, cut 1/2 cup potatoes, boiled and chopped 1 onion, chopped thinly 1 teaspoon cumin 1 teaspoon ginger garlic paste 1 teaspoon red chili powder 1 teaspoon turmeric powder 2 teaspoons oil green coriander, A little (finely chopped) salt, as per taste 1 tablespoon coriander seeds 1 tablespoon fennel     10   20     To make fennel-based potatoes and brinjals, first heat oil in a pan. Add cumin seeds to it and let it cook for 10 seconds. Now add onion to it and cook till onion becomes soft. After it becomes soft, add ginger garlic paste and let it cook for 2 minutes. After 2 minutes, add brinjal and cook. After half cooking, add potatoes to it. Let it cook for 2 to 3 minutes. Now add red chilli powder, turmeric powder and some salt to it. Mix and cook till the vegetables are cooked. Now take a small pan. Add coriander seeds and fennel in it. Cook for 30 seconds and then grind in a mixer grinder. Add this masala to the vegetable and mix. After 1 minute, turn off the gas and garnish with green coriander. Serve Fennel Potato Brinjal with Garlic Dal and Phulka for lunch.
