Rabodi Ki Sabzi Recipe (Recipe In Hindi)

Rabodi ki sabzi is one of the oldest traditional dishes of Rajasthani cuisine. Rabodi is made from buttermilk and corn. When corn is in season and available, people make Rabodi from it. To cope with the harsh climatic conditions in Rajasthan, people make this Rabodi and use it when there is a shortage of vegetables. This is a simple, tasty and healthy Marwari dish that can be made in 20 minutes.  Rabodi, curd, onion, green chilli, cumin, red chilli powder, turmeric powder, coriander powder, salt, oil, water   1 cup Rabodi 1/2 cup curd 1 onion, finely chopped 2 green chillies 1 teaspoon cumin 3/4 teaspoon red chilli powder 1/4 teaspoon turmeric powder 1 teaspoon coriander powder Salt as per taste 1 tablespoon oil Water , hot water, as per use     10   20     To make Rabodi Sabzi, first cut the Rabodi into small pieces. Put them in hot water and soak them for 1 to 2 hours until they become soft. Now heat oil in a pan. Add cumin seeds in it and let it cook for 15 seconds. After 15 seconds, add onion and green chillies and let it cook till the onion becomes soft. After the onion becomes soft, add red chili powder, turmeric powder, coriander powder, salt and mix. Now add whipped curd to it and mix. Let it cook on low flame and keep mixing the vegetables. After 3 to 5 minutes add Rabodi in it. Take out Rabodi from water and put it in the pan. Cook for 5 to 7 minutes and then garnish with green coriander. Serve Rabodi sabzi with spinach raita and phulka for lunch.
