Potato Vindaloo Recipe (Recipe In Hindi)

Potato Vindaloo is a spicy Goan curry which tastes different from other potato curries. Prawn or Chicken Vindaloo is made in Goa, this is the same Veg recipe.  Dry Kashmiri chillies, fenugreek seeds, garlic, shallots, cumin seeds, turmeric powder, vinegar, water, potatoes, salt, oil, mustard seeds, curry leaves, water, sugar   For Vindaloo Paste 12 dried Kashmiri chillies, broken and soaked in hot water for 1/2 hour 1/4 tsp fenugreek seeds, roasted 7 cloves garlic 4 small onions, peeled 1/2 tsp cumin seeds 1/4 1/2 teaspoon turmeric powder 2 teaspoons vinegar 1/3 cup water, as required For Potato Vindaloo 3 potatoes, peeled and chopped Salt, as per taste 2 tablespoons oil 1 teaspoon mustard 10 curry leaves Water, as per 1/2 teaspoon Sugar     10   30     To make Aloo Vindaloo, first heat a saucepan. Add chopped potatoes, water and salt to it. Cook until the potatoes are half cooked or soft. Drain the water from the potatoes and keep both separately. Now put the ingredients given for Vindaloo Masala in a mixer grinder and grind them. Now heat oil in a pan. Add mustard seeds and curry leaves and let it cook for 10 seconds. After 10 seconds, add Vindaloo paste and let it cook for 3 minutes. After 3 minutes, add 1/2 cup water, potatoes, salt and mix. Cook for 10 to 12 minutes. After that add some sugar, mix and serve hot. Serve Aloo Vindaloo with Sol Kadhi and rice for lunch.
