Palak Baingan Ki Sabzi (Recipe In Hindi)

Spinach brinjal vegetable is a very simple vegetable which you can prepare for daily meal. You can also pack this vegetable in your lunch box.  Brinjal, spinach, ginger, garlic, cumin, curry leaves, coriander powder, red chilli powder, asafoetida, salt   10 brinjal, small, cut into wedges 300 grams spinach, chopped 1 inch ginger, grated 3 cloves garlic, finely chopped 1 teaspoon cumin 1 sprig curry leaves, finely chopped 1 teaspoon coriander powder 1/2 teaspoon Red chilli powder 1/4 tsp Asafoetida Salt as per taste     10   30     To make spinach brinjal curry, first heat oil in a pan. Add spinach, some salt and cook until spinach becomes soft. After cooking, turn off the gas and keep aside. Now add some more oil in the same pan. Add cumin and curry leaves in it. Let it cook for 15 seconds. After that add ginger, garlic, brinjal and salt. Mix, cover the pan and cook until the brinjal becomes soft. Keep stirring in between. After the brinjal becomes soft, add asafoetida, coriander powder, red chilli powder and let it cook for 2 minutes. Now add cooked spinach to it and mix. Let it cook for 30 seconds and serve. Serve Palak Baingan Sabzi with Gujarati Kadhi and Methi Thepla for lunch.
