Oriya Style Ghanta Tarkari Recipe – Oriya Style Ghanta Tarkari (Recipe In Hindi)

Ghanta Tarkari is an Odia recipe in which vegetables are cooked with pulses. Due to the presence of more vegetables, this vegetable is also full of nutrition. This dish is mostly made in Odia during festivals.  Pumpkin, Potato, Chickpea Pod, Raw Banana, Radish, Sweet Potato, Arbi, Yam, Brinjal, Petha Pumpkin, Lima Beans, Tomato, Cucumber, Parwal, Kakoda, Zucchini, Coconut, Ginger, Bay Leaf, Black Gram, Sprouts Moong, turmeric powder, salt, jaggery, dry red chilli, cumin, cumin powder, red chilli powder, ghee   1 cup pumpkin, cut 2 potatoes, cut into pieces Rice pod, cut into 1 inch length 1 raw banana, peeled and cut 1 radish, cut 1 sweet potato, peeled and cut 2 colocasia, peeled and cut 1/2 cup Yam, peeled and cut 1 Brinjal, cut 1/2 cup Petha Pumpkin, peeled and cut 5-6 Lima Beans, cut into 1 inch lengths 1/2 cup Tomato, peeled and cut 1/2 cup Cucumber, peeled and cut Take 3 Parwal, cut 3 Kakoda, cut 1 ridge gourd, peel and cut coconut, grate 1/4 cup coconut, cut 1/4 cup ginger, grate 1 bay leaf 1/2 cup black gram, soak 1 /2 cups sprouted moong 1 teaspoon turmeric powder Salt, as per taste 1 tablespoon jaggery, grind 2-3 dry red chillies, for tempering 1 teaspoon cumin seeds 1/2 tablespoon cumin powder, grind 1/2 tablespoon Red chilli powder 1 tablespoon ghee     15   50     To make Oriya style Ghanta Tarkari, first soak the Kala Chana for 3 to 4 hours. Wash the Moong and soak it in water overnight. Drain the water and put it in a cotton cloth. Tie it and keep it in a container for 1 day. When you open it you will find sprouted moong. Now add 1 tablespoon cumin and 4 to 5 dry red chillies in a pan and cook for 2 to 3 minutes. Cool and keep aside. Wash and chop all the vegetables. Now add potatoes, yam, taro, pumpkin, radish, black gram, 1 cup water, turmeric powder, salt, bay leaf, ginger in a pan and cook. After 5 minutes, add remaining vegetables and shredded coconut. Mix, cover the pan and let it cook. After the vegetables are half cooked, add powdered jaggery to it and cook till the vegetables are cooked. Turn off the gas and add sprouted moong. Now heat ghee in another pan. Add roasted dry red chillies, cumin seeds and let it cook for 15 seconds. Now add red chili powder and cooked vegetables to it. Add grated coconut and let it cook for 4 to 5 minutes. Switch off the gas and serve. Serve Oriya Style Ghanta Tarkari with rice/phulka and tadka raita.
