Doli Ki Roti (Recipe In Hindi)

Doli roti is made from wheat. This is an old recipe which has been around for a long time. You can also serve it for breakfast. It is filled with a mixture of chana dal which further enhances its taste.  Black cardamom, fennel, chana dal, khus khus, sugar, water, wheat flour, sugar, wheat flour, salt, water, oil, chana dal, salt, red chilli powder, coriander powder, garam masala powder, turmeric powder, Ginger, Onion, Water   For making yeast 12 big cardamoms 1/2 cup fennel 1/2 cup chana dal 1/2 cup khus khus 1/2 cup sugar 2 cups water 3 teaspoons wheat flour For roti 2 teaspoons sugar 4 cups wheat flour 1 teaspoon salt Water, lukewarm, Oil for kneading, 2 cups chana dal Salt for frying, as per taste 1 teaspoon red chili powder 2 teaspoons coriander powder 1/2 teaspoon garam masala powder 1/4 teaspoon Tablespoon turmeric powder 2 inches ginger, grated 1/4 cup onion, finely chopped Water, as needed     30   20     To make Doli Roti, first pour water in a saucepan and let it boil. Now add cardamom, fennel, chana dal, khus khus and sugar. Cover the saucepan and let it boil for 2 minutes. Leave the pan covered, cover the saucepan with a lukewarm cloth and keep it in a corner of your kitchen. Leave it like this for 24 hours. After 24 hours, filter this water and mix 3 tablespoons of wheat flour in it thoroughly. Cover it again with a warm cloth and keep it aside. Leave it aside for 3 hours. After 3 hours, take half of the mixture and add wheat flour, sugar, salt and lukewarm water to it and knead a soft dough. Cover it and keep it aside for 3 hours. Now we will make the mixture to fill it. Add chana dal, salt, turmeric powder, ginger and water in a pressure cooker. Cook till 2 whistles. After cooking, drain the water. Now let this dal cool down a bit and add onion to it. Mix it. Heat oil in a pan. Now take a little kneaded dough like pari. Make a puri out of it and place masala in the middle. Close the puri from all sides. Flatten it with your hands. Slowly make it whole again. Put this puri in hot oil and cook till it turns golden. Serve hot. Serve Doli Roti with Jaipuri Aloo Onion Sabzi and Boondi Raita.
