Maharashtrian Aloo Bhujne Recipe – Maharashtrian Aloo Bhujne (Recipe In Hindi)

Maharashtrian Aloo Bhujne is a simple recipe in which potatoes are cooked with everyday spices. It is easy to make and you can even pack it for your lunch box. Bhujane is a curry which is very famous among the Pathare Prabhu community of Maharashtra.  Potato, onion, mustard seeds, green chillies, turmeric powder, ginger garlic paste, salt, oil, wheat germ, chana dal, fenugreek seeds, whole black pepper, coriander seeds, dried red chillies, cumin seeds, mustard seeds, turmeric Powder, Asafoetida   4 potatoes, peeled and cut into rounds 2 onions, finely chopped 1/2 teaspoon mustard seeds 1 green chilli, chopped 1 teaspoon turmeric powder 1 teaspoon ginger garlic paste Salt 2 tablespoons oil 2 tablespoons oil sambar masala For 1 tablespoon wheat germ 1 tablespoon gram dal 1/2 teaspoon fenugreek seeds 1 teaspoon whole black pepper 5 tablespoon coriander seeds 5 dry red chillies 1/2 teaspoon cumin seeds 1/2 teaspoon mustard seeds 1 teaspoon Turmeric powder asafoetida, a pinch     10   30     To make Maharashtrian Aloo Bhujane, first peel the potatoes and cut them into rounds. Now put it in a pressure cooker with water as per requirement and cook till 1 whistle. Let the pressure release and keep aside. Now add coriander seeds, wheat germ, gram dal, cumin, mustard, fenugreek seeds, dry red chilli, asafoetida and turmeric powder in a pan. Bake for 5 minutes. Let it cool a bit and grind it in a mixer grinder. Keep it aside. Now heat oil in a pan. Add mustard seeds and cumin seeds and let it cook for 15 seconds. Now add onion, ginger garlic paste and cook for 10 minutes. Now add green chilli, turmeric powder and ground spices to it. Add some water and mix. Now add potatoes and salt in it. Cook for 2 minutes and garnish with green coriander. Serve hot. Serve Maharashtrian Aloo Bhujane with Khandeshi Dal and Phulka for lunch.
