Lauki Yakhini Recipe – Lauki Yakhini (Recipe In Hindi)

In Lauki Yakhni, bottle gourd is cooked with curd and spices. This is a Kashmiri dish in which garlic and onion are not used. Cardamom and clove are used in it which enhances its taste. You can also make this vegetable with bitter gourd or cabbage.  Bottle gourd, cinnamon, cardamom, clove, celery, ginger powder, fennel powder, asafoetida, curd, mustard oil, salt   1 gourd 1 inch cinnamon 2 cardamoms 3 cloves 1/2 tsp celery 1/2 tsp ginger powder 1 tsp fennel powder 1/4 tsp asafoetida 1 cup curd 1-1/2 tbsp mustard oil Salt to taste According     15   35     To make Lauki Yakhni, first cut the bottle gourd into small pieces. Now heat oil on a pan. Put bottle gourd on it and cook till it turns light brown. Keep it separately. Now heat oil in a pan. Add cloves, cinnamon, celery and cook for 30 seconds. Lower the flame and add water into it. After water boils, add bottle gourd, ginger powder, fennel powder, asafoetida and mix well. Now add curd to it and mix. Let it cook for 3 to 5 minutes. Keep mixing. Add salt and cook for another 2 minutes. After 2 minutes, garnish with green coriander and serve. Serve Lauki Yakhni with Dal Fry, Kachumber Salad and Phulka for lunch.
