Arbi is good for health. Arbi is rich in dietary fiber and carbohydrates. It is also rich in vitamins and minerals. This spicy dum is made by adding arbi dum. This Dum, full of spices and flavour, is cooked in Arabic curd gravy. Arbi, Oil, Oil, Tomato, Green Chilli, Ginger Garlic Paste, Onion, Curd, Asafoetida, Celery, Turmeric Powder, Coriander Powder, Red Chilli Powder, Garam Masala Powder, Salt, Coriander 300 grams arbi, boiled and cut into pieces 2 tablespoons oil for frying, for vegetable 1/2 cup tomato, finely chopped 1 tablespoon green chilli, finely chopped 2 teaspoons ginger garlic paste 1/4 cup onion, finely chopped 1/2 cup curd Asafoetida, a pinch 1/2 celery 1/4 teaspoon turmeric powder 1 teaspoon coriander powder 1 teaspoon red chili powder 1/4 teaspoon garam masala powder Salt, as per taste 2 tablespoons green coriander 15 30 To make Dum Arbi Sabzi, first beat the curd and keep it aside. Take oil in a pan and fry the arbi pieces till they turn golden brown. Heat the oil in the pan to make the vegetable. Add seasoning of celery and asafoetida. Add ginger and garlic paste and mix. Add red chilli powder, coriander powder, turmeric powder and mix. Add onion and green chillies and mix. After onion becomes soft, add tomatoes and cook until tomatoes become soft and oil starts appearing on top. Now turn on low flame, add curd to the vegetable and cook while stirring for 2 minutes. Salt and garam masala. Add and mix. Now add arbi and mix. Add 1/2 cup of water and cover the lid so that the steam does not come out and cook the vegetable on low flame for 10 minutes. Add green coriander and serve hot. Serve Dum Arbi Sabzi with Tawa Paratha and Boondi Raita for lunch.
