Bihari Karela and Aloo Ki Subzi (Recipe in Hindi)

Bitter gourd and potato curry is a healthy dish which Biharis like. This is a Bihari vegetable which you can prepare for daily food. Punch masala is used in this vegetable which enhances its taste.  Bitter gourd, potato, onion, panch phoron masala, mustard oil, salt, red chilli powder, turmeric powder   4 bitter gourds 2 potatoes, chopped 3 onions, chopped 2 teaspoons Panch Foran Masala Mustard oil, as per use Salt as per taste 1 teaspoon red chili powder 1/2 teaspoon turmeric powder     20   45     To make Bihari bitter gourd and potato curry, first cut the bitter gourd thinly. Now add one spoon oil, mix and keep aside for 30 minutes. After 30 minutes, press the bitter gourd and take out all the water. Now heat oil in a pan and add bitter gourd. Let it cook for 7 to 8 minutes and keep it aside. Add potatoes in this oil and cook it half. Take it out and keep it aside. Now heat oil in a pan. Add panch phoron masala and onion. Cook until onion becomes soft. Now add salt, turmeric powder, red chilli powder, bitter gourd and potatoes, mix and cook till the potatoes and bitter gourd are cooked. Take out in a bowl and serve hot. Serve Bihari Bitter Gourd and Potato Sabzi with Panchmel Dal and Phulka for lunch.
