Not only is its name delicious, it is even more delicious to eat. Brinjal is cooked with spicy spices which further enhances its taste. You can also prepare this vegetable for your lunch box.  Brinjal, Tomato, Onion, Garlic, Green Chilli, Ginger, Turmeric Powder, Coriander, Coriander Powder, Red Chilli Powder, Pickle, Achari Masala, Oil, Asafoetida, Salt, Mustard, Cumin, Fennel, Kalonji Seeds, Fenugreek Seeds , celery, dried red chilli, dry mango powder   1 brinjal 3 tomatoes 1 onion 5 cloves garlic, finely chopped 2 green chillies, finely chopped 1 inch ginger, grated 1/2 teaspoon turmeric powder 2 tablespoons green coriander, chopped 1 tablespoon coriander powder 1 teaspoon red Chilli powder 1-1/2 tsp pickle, mango 1-1/2 tsp achari masala oil, as per use asafoetida, a pinch of salt, as per taste 1 tsp mustard for pickle masala 1 tsp cumin 1 tsp fennel 1/4 tsp nigella seeds 1/4 tsp fenugreek seeds 1/4 tsp celery 2 dried red chillies 1/2 tsp dry mango powder     10   45     To make Achari Baingan Bharta, first of all put the ingredients given for the pickle masala in the pan and roast it. Do not add dry mango powder. Now add roasted spices and mango powder in a mixer grinder and grind it. Now apply some oil on the brinjal. Now place onion, brinjal and tomato in a baking tray and cook it at 200 degrees for 30 minutes. After that keep it aside to cool. Now take out the peel of brinjal and mash it. Also peel the onion and chop it finely. Peel the tomato and take out the seeds. Mash this also. Now add oil in a pan. Add ginger, garlic, green chilli, asafoetida and let it cook for 1 minute. After 1 minute, add onion, tomato, turmeric powder, coriander powder, red chilli powder and salt. Mix and let it cook for 3 minutes. After 3 minutes, add Achari masala, pickles, brinjal and mix everything well. After cooking, garnish it with green coriander. Serve Achari Baingan Bharta with Tawa Paratha and Garlic Dal.
