I kept the lemon juice and zest in the recipe. Line 2 cookie trays with parchment paper and keep aside.Beat butter and sugar in a large bowl with mixer until well blended. Beat in yolks, lemon zest, lemon juice, and salt. With mixer on low speed, beat in flour just until moist clumps form. Gather dough together.Take walnut sized balls of dough and roll them well. Place cookie dough balls on the trays with about 1 inch between them.Make an indentation in the center of each ball with your thumb.Bake cookies until firm and lightly golden on bottom, about 18 to 20 minutes.Remove cookies from oven and immediately fill indentations with curd or jam.
