Sweet and Spicy Szechuan Style Vegetables In Ginger Garlic Sauce

Indo Chinese is a favorite and when combined with ginger garlic and a sweet and spicy Schezwan sauce loaded with vegetables – it becomes a hot favorite.  Onion, Broccoli, Red Bell pepper (Capsicum), Carrots (Gajjar), Salt and Pepper, Mother’s Recipe Ginger Garlic Paste, Green Chillies, Spring Onion Greens, Corn flour, Tomato Ketchup, Red Chilli sauce, Vinegar, Salt   1 Onion , cut into chunks 1 cup Broccoli , cut into florets 1 Red Bell pepper (Capsicum) , cut into diced 1 Carrots (Gajjar) , cut into rounds Salt and Pepper , to taste For the sauce 1 teaspoon Mother’s Recipe Ginger Garlic Paste 2 Green Chillies , finely chopped 1/2 cup Spring Onion Greens , finely chopped 1 tablespoon Corn flour 1 tablespoon Tomato Ketchup 1 tablespoon Red Chilli sauce 1 teaspoon Vinegar Salt , to taste     10   25     To begin making the Sweet and Spicy Szechuan Style Vegetables In Ginger Garlic Sauce, first prep all the vegetables and keep the ingredients ready.Heat oil in a wok over medium heat; add the onions, capsicum, broccoli and carrots. Stir-fry until the vegetables are just about cooked.  Once they are cooked, keep aside.The next step is to prepare the sauce. In a small mixing bowl, combine the corn flour, 1 cup of water and make a smooth paste. Add the remaining sauce along with vinegar and salt.Heat a teaspoon of oil in the same wok over medium heat; add the Mother’s recipe ginger garlic paste, spring onions, green chillies and sauté for a few minutes until the raw smell goes away. To this add the cornflour and Schezwan sauce mixture.Keep stirring until the sauce thickens and cooks completely. Once done, add in the stir-fried vegetables and give it a brisk boil.Once done, turn off the heat and serve along with Chinese Fried Rice for a wholesome weeknight dinner.Serve the Sweet and Spicy Szechuan Style Vegetables In Ginger Garlic Sauce along with Vegetarian Hakka Noodles (Chinese Chow mein Recipe) and end the meal with Toffee Banana Recipe (Classic Chinese Dessert).
