Phulkari Pulao Recipe – Phulkari Pulao (Recipe In Hindi)

Phulkari Pulao is a disappearing traditional dish of Punjab. This Phulkari Pulao of Punjab is inspired by the traditional Phulkari work made in cloth. This pulao is made by mixing several types of rice. Made with saffron, cheese and poppy seeds, this rice looks like a bunch of flowers. The taste of this pulao made of dry fruits, dry spices and cheese is excellent.  Rice, poppy seeds, milk, saffron, cheese, ghee, cloves, cinnamon, whole black pepper, cardamom, dagadphool, cashew nuts, almonds, raisins, salt, carrots, green peas.   1 cup rice, 1 cup rice (Basmati or 4 types of mixed rice) 1/4 cup poppy seeds, 1/4 cup poppy seeds 1/4 cup milk, 1/4 cup milk Saffron, a pinch 100 grams paneer, cut into pieces 2 tablespoons ghee 4 cloves 1 cinnamon 1 teaspoon whole black pepper 4 cardamoms 2 cardamoms 10 cashews 10 almonds, cut in half 2 tablespoons raisins Salt to taste 1/4 cup carrots, finely chopped 1/4 cup green peas     15   30     To make Phulkari Pulao, first boil the poppy seeds and rice. Only 80% should be ripe. Strain it in a strainer. Heat the milk slightly and soak the saffron. Add ghee in the pan and fry the dry spices cinnamon, cardamom, black pepper, cloves and dagphool on medium flame. Add all the dry fruits like almonds, cashews and raisins and fry them. Add paneer, peas and carrots and fry for 1 to 2 minutes. Add rice, poppy seeds, salt and saffron milk and let it cook. Phulkari Pulao is ready. Serve Phulkari Pulao with Boondi Raita for lunch.
