Pavakkai Poriyal Recipe (Recipe In Hindi)

Bitter gourd Poriyal is an easy and delicious vegetable dish which can be prepared in very less time. This vegetable is cooked with jaggery and dry mango powder. For taste, roasted peanuts are added to it, which further enhances its taste.  Bitter gourd, mustard seeds, cumin, turmeric powder, asafoetida, red chilli powder, coriander powder, cumin powder, dry mango powder, curry leaves, jaggery, peanuts, oil, coriander, salt   2 cups bitter gourd, seeded and boiled 1/4 tsp mustard seeds 1/4 tsp cumin 1/2 tsp turmeric powder 1/4 tsp asafoetida 1/2 tsp red chilli powder 1 tsp coriander powder 1/2 tsp Cumin powder 1 teaspoon dry mango powder Curry leaves, a little, chopped 1 tablespoon jaggery 1/4 cup peanuts, roasted, grated Oil, as per use Coriander, a little, finely chopped Salt, as per taste     10   40     To make bitter gourd vegetable, first cut the bitter gourd. Then cook it in a pressure cooker with water and salt. When the bitter gourd is cooked, take it out and keep it aside. Now heat oil in a pan. Add mustard seeds, cumin seeds, curry leaves and fry for 10 to 15 seconds. After that add asafoetida, turmeric powder and bitter gourd in the pan. Cook it for 2 to 3 minutes. After 2 to 3 minutes add red chilli powder, dry mango powder, coriander powder, cumin powder and jaggery. Mix it well and cook until the jaggery melts. Cover the pan and cook for 5 to 6 minutes. Add roasted peanuts and green coriander on top and mix once again. Check salt and spices and serve hot. Serve bitter gourd vegetable with mint moong dal, kachumber salad and phulka for lunch.
