In Goan style Brinjal Bharta, brinjal is cooked on charcoal. You can also roast brinjal in the oven. The taste of this recipe gets enhanced with onion and tamarind. Goan style Brinjal Bharta can be served with raita or dal. It is easy to make and enhances the taste of your daily food. Brinjal, onion, green chilli, green coriander, tamarind paste, coconut, tamarind, salt, oil 1 Brinjal 2 Onions, finely chopped 2 Green Chillies, chopped 1/2 cup Coriander, finely chopped 1 tablespoon tamarind paste 2 tablespoon coconut, grated 1 tamarind, marble-sized Salt as per taste 1 tablespoon Oil 10 45 To make Goan Style Brinjal Bharta, clean the brinjal and make 4 slits in it. Now heat oil in a pan. Apply oil on the brinjal, place it in the pan and push it. After 2 minutes, open the pan and turn the brinjal. Now put the tamarind in one slit of the brinjal and push the pan again. Keep turning the brinjal until it is cooked from all sides. Once cooked, the brinjal will turn slightly brown and release water. Leave the brinjal covered until it cools down. After it cools down, peel it and keep it aside. Now mash the brinjal and add onion and green chilli to it. Add coconut to it and mix well. Add tamarind paste, salt and garnish with green coriander. Serve Goan Style Brinjal Bharta with Gujarati Kadhi, Khichiya Churi and Phulka for lunch.
