Eggless Whole Wheat Plum Cake Recipe | Christmas Plum Cake

 This Whole Wheat Eggless Plum Cake Recipe is a boozy, dark, intense cake that is made in advance for Christmas. The nuts and dry fruits are steeped in the rum and the cake is additionally loaded with nuts making it a wholesome cake full of bite. Everyhome has a way of making a Christmas Cake and over time, I have adapted the recipe to the taste and flavours which we love at home.   Black Raisins, Prunes, Apricots, Dates, Dried Figs, Cranberries, Rum, Fresh orange juice, Fresh orange juice, Whole Wheat Flour, Almond Meal (Badam Powder), Baking powder, Baking soda, Oil, Brown Sugar (Demerara Sugar), Cinnamon Powder (Dalchini), Dry ginger powder, Vanilla Extract, Slivered Almonds (Badam), Walnuts, Curd (Dahi / Yogurt)   Ingredients to be soaked in rum/ orange juice 1/4 cup Black Raisins 1-1/4 cups Prunes , finely chopped 1/4 cup Apricots , finely chopped 1/4 cup Dates , finely chopped 1/4 cup Dried Figs , finely chopped 1/4 cup Cranberries 100 ml Rum 240 ml Fresh orange juice Main Ingredients 60 ml Fresh orange juice 200 grams Whole Wheat Flour 1/2 cup Almond Meal (Badam Powder) 1/2 teaspoon Baking powder 1/4 teaspoon Baking soda 3/4 cup Oil , or melted butter 1 cup Brown Sugar (Demerara Sugar) 1 teaspoon Cinnamon Powder (Dalchini) 1 teaspoon Dry ginger powder 1 teaspoon Vanilla Extract 1/2 cup Slivered Almonds (Badam) 1/2 cup Walnuts , chopped 240 ml Curd (Dahi / Yogurt)     120   40     To begin making the Eggless Plum Cake recipe, prepare all the ingredients and keep ready.Traditionally the dry fruits are soaked in juice and rum for about 2 days to a week, a month or even a year. Place the all the dry fruits into a large mixing bowl. Pour over the rum and orange juice and grate the orange zest (optional).Mix until well combined, then cover the bowl with cling film and set aside overnight or a few weeks or a month or a year. The longer you soak, the richer the taste of the christmas cake. Here in this recipe, the dry fruits have been soaked for a month.Proceed to the remaining steps once your soaked fruits are ready.Preheat the oven to 170 C.Sift the flour, baking powder and the spices together and keep aside. Line the base and sides of a 9 inch springform cake pan with a layer of parchment paper, making sure the paper reaches the top of the tin. You can also optionally grease and dust the pan. In a large bowl or a KitchenAid Stand Mixer, whisk the butter/oil and sugar together until fluffy. Gradually beat in yogurt. Add in the flour slowly until well combined.Finally add in the soaked dried fruits, its liquids, the chopped nuts and combine it into the flour mixture. Don’t over beat at this stage, we just want all the ingredients to be well combined.Spoon the above cake mixture into the springform pan and level the surface with the back of a spoon. Bake for 1 and a half hours approximately or until a skewer inserted into the centre of the cake comes out clean.The Eggless Plum Cake typically tends to darken a lot during baking, if this happens cover the top with parchment paper or aluminum foil in the middle of the baking process.Once the Eggless Plum Cake is baked remove it from the oven and allow it to cool completely in the pan.Store the Christmas Cake/ Whole Wheat Eggless Plum Cake in an airtight container, wrapped in greaseproof paper and aluminium foil, for two to three months.You can also bake the Christmas Cake/ Whole Wheat Eggless Plum Cake in smaller pans and gift them to your family and friends during the holiday season.
