Doodhi Halwa Recipe (Bottle Gourd Halwa)

Doodhi as a vegetable is not liked much by everyone. But the Doodhi Halwa tastes delicious and is also a healthy dessert option for the festive season. It has a tasty rich caramelized flavor and  can be served to the kids without them being fussy about eating it.   Bottle gourd (lauki), Milk, Sugar, Ghee, Cashew nuts, Cardamom Powder (Elaichi)   4 cups Bottle gourd (lauki) , grated 1 cup Milk 1 cup Sugar , adjustable 1/2 cup Ghee Handful Cashew nuts , and raisins 1 teaspoon Cardamom Powder (Elaichi)     20   45     To begin the preparation of Doodhi Halwa, in a deep heavy bottom pan heat 3/4th ghee.Add grated bottle gourd and saute it for a couple of minutes.Add milk to this and cook on a low flame till all the milk evaporates and the doodhi is cooked with no raw smell left.Add sugar and cook till the sugar melts and is completely soaked by the doodhi.Keep mixing it to avoid it from sticking to the bottom.Once the sugar is completely soaked up, increase the flame and cook it for a minute and let the halwa caramelize slightly.In a small pan, heat the remaining ghee and add the cashews and raisins, let them turn gold.Pour the tempering over the halwa and give it a good mix.The Doodhi Halwa is now ready to be served as a dessert for a festival lunch or dinner.
