Carrot Sooji Phirni is an excellent dessert eaten after Ramzan meal. It is also prepared during other important festive occasions such as marriages. Most phirni are prepared with rice and milk, but in this one we have cooked carrots in milk. Semolina in Phirni creates a wonderful creamy texture which makes this Phirni even more delicious. Carrot, milk, sugar, semolina, cardamom powder, almonds, ghee, saffron 2 carrots, grated 500 cups milk 5 tablespoons sugar 1/2 cup semolina 1/2 teaspoon cardamom powder 10 almonds, blanch and remove the peel (apply silver layer) 2 tablespoons ghee 5 saffron, a little 10 30 To make Carrot Semolina Phirni, first heat 1 tablespoon ghee in a saucepan. Add grated carrots to it and cook for 5 minutes. Now heat milk in a saucepan and add sugar to it. Let it boil and after it boils, add carrots, cardamom powder, saffron and let it cook for 10 minutes. After 10 minutes add semolina and keep mixing so that there are no lumps in it. After it becomes thick, turn off the gas and keep it aside. Now add the remaining ghee in a small pan. Add almonds in it and let it cook for 10 seconds. Add this tadka to the phirni, mix and serve. Serve this flavourful Carrot Semolina Phirni as a dessert after your meal.
