Cape Gooseberry Salad Recipe

Cape Gooseberry  also known as Rasbhari in India adds great flavour in a salad . This salad recipe is a quick and refreshing way to use the seasonal golden berries in their natural form. Sweet fresh figs pair well with the tart berries. You can also use apples or guavas. Use greens and herbs of your choice.  Cape Gooseberries, Fresh Figs, Onion, Cucumber, Iceberg lettuce, Fresh Herbs, Extra Virgin Olive Oil, Honey, Lemon juice, Lemon zest, Black pepper powder, Salt   5 Cape Gooseberries , husk removed and halved. 4 Fresh Figs , quartered 1 Onion , sliced 1 Cucumber , halved and sliced 3 Iceberg lettuce , torn Fresh Herbs , Handful like basil, mint, chopped For the dressing 2 tablespoons Extra Virgin Olive Oil 1 tablespoon Honey 2 teaspoons Lemon juice 1/2 teaspoon Lemon zest 1 teaspoon Black pepper powder , (or as required) Salt , to taste     10   0     To begin making the Cape gooseberry salad, first make the dressing.In a small bowl or glass jar whisk together the ingredients under’ for the dressing’, the lemon juice, olive oil, honey, lemon zest, black pepper powder and salt.In a mixing/salad bowl toss together the cape gooseberries, figs, onion, cucumber and lettuce.Drizzle the dressing over the vegetables and fruits and toss the ingredients well to combine.
