Bharwa Karela Masala Recipe (Recipe In Hindi)

Bharwa Karela Masala is a delicious vegetable dish that you can make for your day or dinner. Stuffed bitter gourd is a dry vegetable so serve it with dal or kadhi. Bitter gourd is known for its health benefits, so serve it to your children also. Jaggery is used in this vegetable which reduces the bitterness of bitter gourd in this vegetable.  Bitter gourd, salt, peanuts, coconut, garlic, cumin, jaggery, turmeric powder, red chilli powder, coriander powder, cumin powder, tamarind paste, salt, oil   2 Bitter gourd 1/2 tsp Salt, other ingredients as per taste 1/2 cup Peanuts 1/2 cup coconut, grated 6 cloves Garlic 2 tsp Cumin 2 tsp Jaggery 1 tsp Turmeric powder 2 tsp Red chilli powder 1 tsp coriander powder 1/2 tsp cumin powder 1 tbsp tamarind paste 1 tsp salt, as per taste 3 tsp oil     20   50     To make Bharva Karela Masala, wash the bitter gourd, make a slit in the middle with a knife and remove the seeds inside. Cut them into 2 inch lengths, add salt and keep aside for 10 minutes. You will see that the vegetable may have released some water. Squeeze out the excess water and wash them thoroughly. Doing this will reduce the bitterness to one level. In a saucepan, add water and bring it to a boil. Put bitter gourd in boiled water and cook it till it becomes soft. Avoid overcooking, as this is necessary to maintain their shape. Remove the bitter gourd and let it cool enough to handle. Roast the peanuts in a pan until they turn brown. Now heat oil in a pan. Add cumin seeds in it and after 15 seconds add garlic in it. Cook until the garlic turns brown. Now add half roasted peanuts, coconut, garlic, cumin, jaggery, red chilli powder, coriander powder, cumin powder and salt in a mixer. Grind this mixture. Do not use water. Add one teaspoon oil to this mixture and mix. Fill half the mixture inside the bitter gourd and keep the other half for gravy. Now pour remaining oil in a pan. Add stuffed bitter gourds in it and cook till they turn brown. Pour some oil in another pan. After the oil is hot, add the remaining spices and let it cook for 2 minutes. After 2 minutes, add 1 cup water and cook until the gravy thickens. After the gravy thickens, add tamarind paste to it, mix and cover the pan. Add salt and let it cook for 2 to 3 minutes more. After 2 minutes, turn off the gas and serve. Serve Bharwa Karela Masala with Gujarati Kadhi, Phulka and rice for dinner.
