Anda Bhurji Recipe

Anda bhurji is probably India’s answer to the ever famous scrambled eggs. Sauteed onions and tomatoes combined with chillies and other spices make a delightful high protein breakfast. If you are rushed for time in the mornings then this is the recipe to make. You can pack it into your office lunch boxes with a tawa paratha and raita for a complete meal.  Whole Eggs, Milk, Ghee, Onions, Tomatoes, Green Chillies, Cumin seeds (Jeera), Coriander (Dhania) Leaves, Salt   6 Whole Eggs , whisked 2 tablespoons Milk , or coconut milk 2 teaspoons Ghee , or oil 2 Onions , finely chopped 3 Tomatoes , finely chopped 2 Green Chillies , finely chopped 1 teaspoon Cumin seeds (Jeera) Coriander (Dhania) Leaves , finely chopped Salt , to taste     15   15     To begin making the Anda Bhurji Recipe – Spicy Indian Style Scrambled Eggs whisk the eggs in a bowl with milk and salt to taste until light and fluffy and keep aside.Into a preheated pan add ghee, the cumin seeds, onions and chopped green chillies and saute till the onions turn slightly caramelized.Once done stir in the tomatoes and saute till they have soften. Once the tomatoes have softened, add the whisked eggs. Turn the heat to low and keep stirring the eggs until it scrambles.It is important to cook on low heat for light and fluffy textured Anda Bhurji.Once the Anda Bhurji is cooked, stir in the chopped coriander leaves and turn off the heat.
