Aloo Baingan Ki Sabzi (Recipe In Hindi)

Potato brinjal curry is made in every house in India but different spices are used in different states. This vegetable is very easy to make and can be prepared in very less time. In Gujarati it is also known as Ringna Batata Nu Shaak.  Brinjal, Potato, Kalonji seeds, Ginger, Cumin, Tomato Puree, Turmeric Powder, Asafoetida, Red Chilli Powder, Coriander Powder, Garam Masala Powder, Sugar, Coriander, Oil, Salt   3 cups brinjal, chopped 1 cup potatoes, peeled and chopped 1/2 tsp nigella seeds 1 tsp ginger, chopped 1/2 tsp cumin 1/2 cup tomato puree 1/2 tsp turmeric powder 1/2 1 teaspoon asafoetida 1 teaspoon red chili powder 1 teaspoon coriander powder 1/2 teaspoon garam masala powder 1/2 teaspoon sugar 2 tablespoons coriander, chopped 2 teaspoons oil Salt as per taste     20   30     To make Aloo Brinjal Sabzi, first heat oil in a pan. Add cumin seeds, nigella seeds and let it cook for 15 seconds. Now add ginger, tomato, turmeric powder, asafoetida, red chilli powder, garam masala powder and cook till tomatoes become soft. Add potatoes, brinjal, salt and 2 cups of water in it. Lower the flame and cover the pan. Let it cook until the vegetables become soft. Keep stirring in between. After cooking, turn off the gas and garnish with green coriander. Serve. Serve Aloo Baingan Sabzi with Gujarati Kadhi and Methi Thepla for lunch.
