Okra Poriyal is a South Indian recipe in which onion and garlic are not used. Even in South India, it is made in different ways but in this dish it has been made like that of the Brahmin community. You can also pack this vegetable in your lunch box. Lady finger, sambar powder, asafoetida, salt, red chilli powder, mustard seeds, curry leaves 500 grams lady finger, cut into rounds 1 teaspoon sambar powder 1/2 teaspoon asafoetida Salt, as per taste Red chili powder, as per taste 1 teaspoon mustard 1 sprig curry leaves, torn 10 40 To make Okra Poriyal, first heat oil in a pan. Add mustard seeds in it and let it cook for 10 seconds. Now add curry leaves, ladyfinger and salt as per taste. Cover the pan and cook till the ladyfinger is cooked. Keep stirring in between. After the ladyfinger is cooked, add sambar powder, asafoetida and let it cook for 3 to 4 minutes. After 4 minutes, turn off the gas and serve hot. Serve Okra Poriyal with mixed vegetable sambar and rice for lunch.
